3.4. Potato And Leek Stew

Serves: 4

Ingredients:

1/3 kg potatoes

2-3 leek stems cut into thick rings

5-6 tbsp olive oil

1/2 bunch of parsley

salt

Peel the potatoes, wash them and cut them into small cubes. Slice the leeks. Put the potatoes and the leeks in a pot along with some water and the oil. The water should cover the vegetables. Season with salt and bring to the boil then simmer until tender. Sprinkle with the finely chopped parsley.

3.5. Courgettes And Rice

Serves: 4

Ingredients:

1 kg small courgettes, diced

1 bunch green onions, finely chopped

40 ml sunflower oil

2 tbsp water

2 medium tomatoes, diced

1 cup rice

1 tsp salt

1 tsp paprika

1 tsp black pepper

2 ½ cups water

1 bunch fresh dill

Sauté green onions in oil and a little water. Cover and cook until soft. Transfer onions in a baking dish, add courgettes, tomatoes, rice, salt, paprika, pepper and water. Mix well. Cover with foil and bake in preheated 180C oven for 30 minutes or until rice is done. Sprinkle with dill.
